Test Lab 010: Clarifications
A clear drink can keep a secret
Your eyes get the first sip. Sometimes they get it wrong. Test Lab 010 turns to clarification: the techniques that change how a cocktail looks, feels and tastes.
A few clues before you taste
An old trick with fresh possibilities — Milk clarification has been used in punch since at least the 17th century. The polished, clear presentation has a surprisingly long history.
Cloudy is part of the process — In milk clarification, cocktail ingredients curdle the milk. The curds help capture compounds from the mixture and are then strained away, leaving a clearer drink.
Texture is part of the reveal — Clarification can soften astringency and change mouthfeel as well as appearance. A drink’s color tells only part of its story.
What changes when you take the cloudiness away? What stays? Come explore the answers with us—and see how closely the glass matches your expectations.
